It’s perfect for a quick weeknight dinner! Garlic Butter Shrimp Pasta
Ingredients-
For the Pasta:
– 8 oz (225 g) linguine or spaghetti – Salt (for the pasta water)-
For the Shrimp:
– 1 lb (450 g) large shrimp, peeled and deveined – 4 tablespoons unsalted butter – 4 cloves garlic, minced – 1 teaspoon red pepper flakes (adjust to taste) – Salt and black pepper to taste – Juice of 1 lemon – 2 tablespoons fresh parsley, chopped (optional, for garnish)
Instructions
1. Cook the Pasta: – Bring a large pot of salted water to a boil. Add the linguine or spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta and set it aside.
2. Cook the Shrimp: – In a large skillet over medium heat, melt the butter. – Add the minced garlic and red pepper flakes, cooking for about 1 minute until fragrant (be careful not to burn the garlic). – Add the shrimp to the skillet. Season with salt and black pepper. Cook for about 2-3 minutes on each side, or until the shrimp turns pink and is fully cooked.
3. Combine: – Add the cooked pasta to the skillet with the shrimp. Toss to combine. – Add the reserved pasta water a little at a time, just enough to create a light sauce that coats the pasta. Squeeze in the lemon juice and stir to combine.
4. Serve: – Taste and adjust seasoning if necessary. – Serve immediately, garnished with chopped fresh parsley if desired.
