Spiced Apple Cider

Ingredients:

  • 8 cups apple cider
  • 1/2 cup packed brown sugar
  • 1/4 cup honey
  • 4 whole cloves
  • 4 whole allspice berries
  • 2 cinnamon sticks
  • 1 tablespoon whole black peppercorns
  • 1 orange, thinly sliced and studded with cloves
  • Optional: Garnish with apple slices, cinnamon sticks, and star anise

Instructions:

  1. In a large saucepan, combine apple cider, brown sugar, honey, cloves, allspice berries, cinnamon sticks, and peppercorns.
  2. Bring to a simmer over medium heat, stirring occasionally until sugar and honey dissolve.
  3. Reduce heat to low, add orange slices, and simmer for 15-20 minutes, or until flavors have infused.
  4. Remove from heat and let steep for 10 minutes.
  5. Strain cider through a fine-mesh sieve into mugs.
  6. Garnish with apple slices, cinnamon sticks, and star anise, if desired.

Tips:

  • For a spicier cider, add a pinch of red pepper flakes.
  • To make it non-alcoholic, use apple juice instead of cider.
  • This cider can be made ahead of time and reheated gently before serving.
